Curried Butternut Squash With Orange And Cumin
- 1 yellow onion
- 2 Granny Smith apples (diced)
- 3 butternut squash (peeled and diced)
- 10 c. chicken stock
- 1 tbsp. curry powder
- 2 cloves garlic
- ½ tbsp. cumin
- Juice of 1 orange with zest
- Salt, white pepper, cinnamon and nutmeg to taste
- Saute onions and garlic, add the rest of ingredients. Bring to a boil and simmer until soft.
- Puree in food processor and adjust seasoning.
