Savory Watermelon Salad
- 1 tablespoon grated lime peel
- 3 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Dash salt, if desired
- 5 cups seedless ¾-inch cubes watermelon
- ½ cup thinly sliced bite-size pieces red onion
- ½ cup sliced and quartered English (seedless) cucumber
- 1 can (15.25 oz) Green Giant™ whole kernel sweet corn, drained
- 3 tablespoons coarsely chopped fresh basil leaves
- ⅓ cup crumbled fat-free feta cheese
- In large serving bowl, mix lime peel, lime juice, oil and salt with whisk until well blended. Add remaining ingredients except feta cheese. Gently toss to coat. Refrigerate about 30 minutes or until chilled.
- Gently stir in feta cheese just before serving.
