Curried Butternut Squash With Orange And Cumin

Serves: 6-8

Ingredients
  • 1 yellow onion
  • 2 Granny Smith apples (diced)
  • 3 butternut squash (peeled and diced)
  • 10 c. chicken stock
  • 1 tbsp. curry powder
  • 2 cloves garlic
  • ½ tbsp. cumin
  • Juice of 1 orange with zest
  • Salt, white pepper, cinnamon and nutmeg to taste

Instructions
  1. Saute onions and garlic, add the rest of ingredients. Bring to a boil and simmer until soft.
  2. Puree in food processor and adjust seasoning.
