Ingredients
- 2 acorn squash
- ½ c. orange juice
- ½ c. packed brown sugar
- ½ c. light corn syrup
- ¼ c. butter
- 2 tsp. grated lemon rind
- ⅛ tsp. salt
Instructions
- Cut off ends of squash. Slice clockwise into 1 inch rings. Remove seeds. Place in single layer in large shallow baking dish. Add orange juice.
- Cover and bake at 350 degrees for 30 minutes. Combine sugar and all remaining ingredients. Simmer 5 minutes.
- Pour over squash rings and bake 15 minutes longer. Baste occasionally.
