Glazed Acorn Squash

  • One 2 lb. acorn squash
  • 1-1/2 cup orange juice
  • ¼ cup brown sugar
  • ½ tsp. salt
  • 2 tbsp. butter

  1. Cut the squash in half. Peel, seed, and cut into ½-inch thick slices. Lay these in a buttered baking pan. In a small bowl, mix the orange juice, brown sugar and salt, pour over the squash and dot with bits of butter.
  2. Cover with foil and bake about 40 minutes, basting occasionally, until tender. Uncover and bake another 10 minutes, to glaze.
  3. This method also works with other winter squashes, such as Hubbard and butternut.
