Ingredients
- One 2 lb. acorn squash
- 1-1/2 cup orange juice
- ¼ cup brown sugar
- ½ tsp. salt
- 2 tbsp. butter
Instructions
- Cut the squash in half. Peel, seed, and cut into ½-inch thick slices. Lay these in a buttered baking pan. In a small bowl, mix the orange juice, brown sugar and salt, pour over the squash and dot with bits of butter.
- Cover with foil and bake about 40 minutes, basting occasionally, until tender. Uncover and bake another 10 minutes, to glaze.
- This method also works with other winter squashes, such as Hubbard and butternut.
