Kabocha Squash Salad

Kabocha Squash
It’s a simple kabocha salad with garlic flavored dressing.

Serves: 4

Ingredients
  • 1 lb. kabocha, sliced into ⅓ inch thick crescent pieces
  • ½ onion, thinly sliced
  • 1 tsp grated garlic
  • 2 Tbsps vinegar
  • 4 Tbsps vegetable oil
  • Salt and pepper to season

Instructions
  1. Soak thinly sliced onion in water for 10 minutes or more. Meanwhile, boil kabocha in a large pot until softened.
  2. Drain kabocha and sprinkle some salt over them and cool.
  3. Mix vinegar, vegetable oil, and garlic in a bowl to make dressing.
  4. Drain onion slices and squeeze them to remove excess water.
  5. Put kabocha and onion in a bowl and pour the dressing.
  6. Put kabocha and onion in a bowl and pour the dressing.
  7. Adjust the flavor with salt and pepper.
